I’m sure everyone is used to taco Tuesdays, but what about trying a Fajita Style Quesadilla recipe? This Fajita Style Quesadilla recipe is so simple to make and it only takes 20 mins to prepare.
What is a quesadilla?
Quesadillas are a Mexican dish consisting of a tortilla filled with either cheese, veggies, meats, or seafood. You can add whatever vegetables or protein you have in the fridge. Black beans also work great in vegetarian quesadillas. If you don’t eat meat or just want a meatless dish you can get your protein from the black beans. The quesadilla is then cooked on a stovetop until the cheese is completely melted and the veggies are tender.
Traditionally, corn tortilla and Oaxaca cheese are used, but I used flour tortillas and shredded cheddar cheese in this recipe. The great thing about quesadillas is that you can experiment with different fillings, cheeses, and tortillas and find out what your preference is. You can definitely have fun making quesadillas. It’s also finger food, no utensils are required. So easy cleanup!
Ingredients used for the quesadillas
Only a few ingredients are used for these quesadillas, which makes them easy and convenient to prepare. I’m using vegetables that you would typically use in a fajita, but I think works great for this quesadilla recipe too!
- Flour tortilla
- Shredded cheddar cheese
- Yellow onions
- Green bell peppers
- Red bell peppers
- Mayo
- Cilantro (optional)
You can serve it with guacamole, sour cream, and salsa. Why not do it up? What’s great about these quesadillas is they only consist of a few ingredients. Salt and pepper I don’t count as part of the ingredients because I add salt and pepper to all my dishes.

Fajita Style Quesadilla
Equipment
- Non stick pan
- Spatula
- Knife

Ingredients
- 3 tablespoons olive oil
- 1 cup green bell peppers cut in thin strips
- 1 cup red bell peppers cut in thin strips
- 1 cup red onion cut in thin strips
- salt and pepper to taste
- 8 ounces shredded sharp cheddar cheese divided
- 4-5 burrito style flour tortillas
- 1/3 cup cilantro chopped
- 2 tablespoons mayo divided
Instructions
- Turn stove to medium heat and add olive oil to hot non stick skillet, wait til olive oil gets hot. Once olive oil is hot put in bell peppers and red onion. Saute peppers and onions for about 8 mins or until onions are translucent and peppers are soft. Once cooked put cooked onions and peppers aside in a bowl. Lower the heat on skillet and wipe the inside of the skillet to get rid of olive oil in a pan.
- Spread mayo to cover one side of the tortilla. Turn the heat up to medium heat and put the tortilla on skillet mayo face down. The mayo gives the tortilla a nice golden crust. After doing this add shredded cheese 3-4 tablespoons. Add peppers and onions to the right side of the tortilla and cook until cheese melts and tortilla crust is crispy and golden brown. Once ready use your spatula to fold the tortilla over. Take out of the skillet and cut into 3 triangular pieces. Serve hot.
