What is a blended burger?
A blended burger is ground protein such as ground chuck combined with mushrooms. You can also substitute another protein. The ratio is usually around 25% mushrooms and 75% ground beef. This is a healthier version of just a plain ground beef burger. When you add mushrooms to the mixture it develops a great umami flavor and makes the burger juicer.
How to make a smashed blended burger?
With your hands grab a handful of ground beef and mushroom mix and place it on a cast iron or flat top griddle and smash it with your spatula. It will cook evenly and will be crispy on the edges. It will look like the kinda burger you would get at a fast-food restaurant and it cooks in no time.

- Cremini mushrooms
- Bib lettuce
- Avocado
- Tomato
- Worcestershire sauce
- Ketchup
- Baby swiss cheese
- Unsalted butter
- Sesame seed buns
All these ingredients will help you make a flavorful and juicy burger. Using 80/20 ground beef also helps the burger taste more flavorful. 80/20 means the meat is 80% fat and 20% lean. So it’s just flavor on top of flavor.
The crazy thing about it is that you don’t notice and taste the mushroom in the patty. You won’t even miss the extra meat with the mushroom substitution. Also, you don’t have to use cremini mushrooms only. You can combine the ground beef with other blends of mushrooms or use other kinds of mushrooms. Ingredients
- 1 1/2 lbs 80/20 ground chuck
- 8 ounces Cremini mushrooms
- 4 tablespoons Unsalted butter
- 1/2 teaspoon Worcestershire sauce
- 1 medium Avocado
- 2 Tomatoes on the vine
- 4 Bibb lettuce leaves
- 8 slices Baby swiss cheese thinly sliced
- 2 tablespoons Ketchup
- 4 Sesame seed buns
- Kosher salt
- Fresh ground pepper
Instructions
- Start by preheating your cast iron on medium-high heat. Then put 8 ounces of cremini mushrooms in a food processor until small dices are formed. It should look similar to ground beef.2. Put 1 tablespoon of unsalted butter into a hot cast iron pan then put in chopped mushrooms in the pan. Cook mushrooms for about 4 mins until browned then season with a pinch of kosher salt and fresh ground pepper. Then put in 1/2 teaspoon of Worcestershire sauce and mix mushrooms with ingredients. Cook about 5-7 mins. Put cooked mushrooms aside and let cool for a few before mixing with ground beef.3. Once mushrooms are cooled add to ground beef. Add more kosher salt and fresh ground pepper to taste and mix with your hands. Add 1 tablespoon of unsalted butter to a hot cast iron pan then add a handful of meat and mushroom mixture. Press down and smash with a spatula. Add a sprinkle of kosher salt. Cook for 3 mins on each side. Take patties out and let rest for 5-10 mins tented with foil on top. 4. Then assemble the burger by placing one slice of bib lettuce, then tomato, then 1 patty, then one thin slice of baby swiss, add 2nd patty, another thin slice of baby swiss, and a squirt of ketchup. Then add the top bun. Enjoy!
