First, start with dicing your mushrooms. Use a food processor for faster results. Grind in a food processor until mushrooms are evenly diced and resemble ground meat.
Add 2 tablespoons of olive oil to a cast-iron pan. Then add mushrooms to hot oil. Add kosher salt and fresh cracked pepper to mushrooms then stir. Cook for about 5-6 mins until mushrooms are brown. Set aside in a bowl and let mushrooms cool.
While the mushrooms are cooling add all the spices to the ground turkey, 1/2 teaspoon of salt, 1/4 teaspoon of cracked pepper, dried thyme, onion powder, garlic powder, and ground cumin. Then add cooled mushrooms to ground turkey and mix together with your hands. Form 4 patties from the mixture.
Add 1 tablespoon of olive oil to a cast-iron pan. Make sure the pan and oil are hot. Then add the four patties to the pan. Cook the patties 5- 6mins on each side for medium/medium-well. Take patties out and let them rest for a few mins.
This is how to make the chipotle mayo. You will need a can of chipotle peppers in adobe sauce. Put mayo, 1 tablespoon of chipotle peppers, fresh lime juice, and salt and pepper into the food processor. Once mix well set aside in a small ramekin for serving.
Let's build the burger. Place the bottom of the brioche bread on the cutting board and put a good layer of chipotle mayo on top. Then add the patty, baby swiss cheese slice, tomato slice, and a butter lettuce leaf. Finally, place the top of the bun on top.
