This Turkey and mushroom burger is a great blend and tastes good too! It’s not your traditional burger, but it’s certainly on the healthier side. It’s a turkey and mushroom blended burger that is 75% ground turkey and 25% diced mushrooms. I created this recipe for a food network contest whose rules were to make a blended burger recipe. You choose the meat and type of mushroom. It was so simple to put together. Let me show you how to make it.
How to make a turkey & mushroom patty?
You’re going to need cremini mushrooms or whatever mushroom you prefer and ground turkey. If you don’t have cremini mushrooms you can substitute white button mushrooms or shiitake. I like to use 1lb of ground turkey and 8 ounces of mushrooms. That’s 75% meat and 25% mushrooms. This is why they call it a blended burger.
You want to dice your mushrooms really small or use a food processor. When you look at the mushrooms they should resemble ground meat. Then you want to cook your mushrooms in a pan and let them cool before adding to the ground turkey. Once the mushrooms are cooled add them to the bowl of ground turkey and mix together with spices. Then you’re ready to form your patties!
How to make chipotle mayo?
I felt the turkey and mushroom burger needed a little kick to it and that’s why I decided to make a chipotle mayo. You really only need a few ingredients. You will need:
- Mayo (store-bought) because it’s easier
- Chipotle peppers in a can
- Lime
- Kosher salt
- Fresh cracked pepper
I like to use a food processor to make this sauce. It’s so simple and fast to use. The chipotle mayo is not overwhelmingly spicy if you eat spicy foods on the regular. The chipotle mayo has a medium heat that adds great flavor and smokiness to the burger.

Turkey and Mushroom Burger

- Large cast iron pan
- Spatula
- Food processor
- Large mixing bowl
Ingredients
- 8 ounces cremini mushrooms
- 1 lb ground turkey 93% lean 7% fat
- 4 leaves butter lettuce
- 4 slices baby swiss cheese
- 4 slices beef steak tomato
- 1 teaspoon kosher salt divided
- 1/2 teaspoon cracked pepper divided
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon ground cumin
- 1/4 teaspoon dried thyme
- 3 tablespoons olive oil divided
- 3 tablespoons mayo
- 1 tablespoon chipotle in can
- 2 teaspoon fresh lime juice
- 1/2 teaspoon kosher salt
- 4 buns Brioche bread
Instructions
- First, start with dicing your mushrooms. Use a food processor for faster results. Grind in a food processor until mushrooms are evenly diced and resemble ground meat.
- Add 2 tablespoons of olive oil to a cast-iron pan. Then add mushrooms to hot oil. Add kosher salt and fresh cracked pepper to mushrooms then stir. Cook for about 5-6 mins until mushrooms are brown. Set aside in a bowl and let mushrooms cool.
- While the mushrooms are cooling add all the spices to the ground turkey, 1/2 teaspoon of salt, 1/4 teaspoon of cracked pepper, dried thyme, onion powder, garlic powder, and ground cumin. Then add cooled mushrooms to ground turkey and mix together with your hands. Form 4 patties from the mixture.
- Add 1 tablespoon of olive oil to a cast-iron pan. Make sure the pan and oil are hot. Then add the four patties to the pan. Cook the patties 5- 6mins on each side for medium/medium-well. Take patties out and let them rest for a few mins.
- This is how to make the chipotle mayo. You will need a can of chipotle peppers in adobe sauce. Put mayo, 1 tablespoon of chipotle peppers, fresh lime juice, and salt and pepper into the food processor. Once mix well set aside in a small ramekin for serving.
- Let's build the burger. Place the bottom of the brioche bread on the cutting board and put a good layer of chipotle mayo on top. Then add the patty, baby swiss cheese slice, tomato slice, and a butter lettuce leaf. Finally, place the top of the bun on top.
